Inspector’s comments
Hot holding is appropriate, macaroni and cheese 175F, mashed potatoes 190F. Burgers on grill cooked to appropriate temperature. Cold holding is appropriate, macaroni salad 35F, coleslaw 44F, turkey 44F. Tom and Jerry drink mix 43F. All food items in prep unit are below 40F. Proper hair restraint and glove usage observed. Proper procedures being following with properly cooling whole turkeys.
