Inspector’s comments
All cold and hot holding acceptable in the main kitchen and Dock of the Bay. Sliced tomatoes 38 degrees, milk 39 degrees, pulled pork 142 degrees, meatballs cooking upon inspection. The main kitchen has 2 new prep units, Dock of the Bay has new sanitation equipment for dish washing. Education was provided in both locations regarding food storage.
