Inspector’s comments
1) Facility has TPHC waiver for liquid egg. Discussed process with chef, found to be accurate to the TPHC waiver agreement. |2) Spray hose currently hanging just above the flood rim of the dish pit sink. Per staff, recently ordered hose was longer than previous hose. Recommended to tighten the spring to hold hose above the floor rim. |3) Facility cooking and cooling: Pastas, meats, soups.
