All cold holding in the pizza prep are functional sausage chunks 42F, sliced tomatoes 44F, sliced peppers 40F. Salad bar area functional sliced tomatoes 42F. Walk-in cooler functional sausage 38F, pepperoni 39F. Walk-in freezer functional. Proper hair restraint and glove usage observed. Facility is overall clean and organized. Machine dishwasher is reaching sanitizing temperature. Hand washing avaliable. Equipment needs some more attention on up keeping.
