Inspector’s comments
All cold holding on the cook line adequate ham 40F, sliced cheese 41F, tomaotes 42F. All hot holding on the adequate at the time of inspection cheese sauce 158F, past sauce 154F. walk-in cooler is fucntional spaghetti noodles 42F, cheese 40F, gravy 43F. Machine dishwasher is functional. Facility is overall clean and organized. Proper hair restraint and glove usage observed. Operator stated they will be getting a new walk-in this year, When this happens they need to submitted a notice of intent to construct to the local DOH office.
