Inspector’s comments
All cold holding on the cook line functional chicken wings 42F, chicken breasts 44F, ground beef 42F, steak 43F, sliced tomatoes 40F. All hot holding functional mashed potatoes 178F, clam chowder 180F, potato soup 184F. Walk-in cooler is functional steak 40F, salmon 38F, rice 41F. Walk-n freezer functional. Facility changed how they cool cooked rice from last inspection they now spread it out finely on a cookie sheet. Proper hair restraint and glove usage observed. Hand washing avaliable. Machine dishwasher is reaching proper sanitizing temperature and sanitizing testing strips avaliable. Long stem probe thermometer avaliable at the facility. Facility has gotten new fryers, grills, and refrigerator since last inspection. Manger stated they are possible getting new flooring put in the kitchen. Facility should submit a notice of intent to construct to the Watertown DOH office prior to any construction taking place.
