Inspector’s comments

No hot holding at time of inspection. Homemade tomato soup was being prepared on the stove top and was at 175F. Homemade tomato soup is being prepared for tomorrows meal. Discussed what the facilities procedure was for properly cooling the soup. Kitchen manger stated that the soup is poured into metal pans no deeper than 2 inches and placed into the walk-in. Spaghetti observed to be properly cooling in walk-in. Cold holding appropriate, shrimp 42F, stuffed shells 41F, haddock 40F., pulled pork 38F. All refrigeration units are operating properly. Facility is clean and maintained. A deep cleaning of the kitchen is scheduled for later this month, and there are plans to get a new dishwasher.
