Inspector’s comments
No hot holding at the time of inspection. All cold holding functional on prep line corn beef 44F, sliced tomatoes 43F, tuna fish 43F. All cold holding in walk-in functional facility pasta 40F, roast beef 42F. Proper hair restraint and glove usage observed. Facility is overall clean and organzied. Machine dishwasher is reaching sanitizing temperature.
