Inspector’s comments
Facility was observed to be cooking and cooling a large amount of food due to the meal schedule. Large quantity of pasta and ravioli were observed cooked and in cooling process. Employee was observed to have to rinse pasta, spread into several large pans, and lay ice packs on top of product and under product to begin cooling process. Employee had to wait until items from refrigerator were removed for lunch service, before pasta is able to be placed into refrigerator, due to lack space. Individual freezers are being utilized for cooling and are observed to be full in capacity. Finding room to maintain proper temperatures was observed to be an issue at facility. Ravioli was observed cooling in freezer, and meeting proper cooling rate.
