Hot holding appropriate, macaroni and cheese 165F, queso 150F. Cold holding appropriate, chicken 40F, hamburger patties 42F. Chopped tomatoes, diced ham, and cheese in prep unit all below 45F. Pizza prep unit is operating properly and all food items below 45F. Restrooms are clean. Proper hair restraint and glove usage observed. Proper cooling procedure observed for chicken wings,. Wings are cooked to 165F, placed on a shallow pan in a single layer and placed a single layer and put in walk-in. Once the wings reach a temperature of 45F or below, they are placed into bus pans and returned to walk-in. Onsite septic system operating properly.
