Inspector’s comments
Food preperation just beginning upon my arrival. Cold holding appropriate, sliced tomatoes 40F, calamari 37F, shrimp 40F, steak 40F, cooked potatoes 40F and variable pastas all 40F. All refrigeration units are operating properly. Walk-in is running at or about 40F. Facility would benefit from a deep cleaning of equipment, shelving and prep tables, etc.
