Inspector’s comments

1) New pizza warmer at the register has arrived but has not been set up yet. Discussed if item is to be hot held above 140 degrees Fahrenheit or is Time as a Public Health Control (TPHC) will be utilized. If TPHC is to be used, waiver will need to be applied for through the NYSDOH Canton DO. |2) Facility has opted to use smaller working quantities of eggs at the grill line submerged in ice water to cold hold items.|3) New vending machine located next to Pizza Forno vending machine has arrived but still needs to be set up. Operator knowledgeable that a permit from NYSDOH will be needed prior to operation. Manager reports likely over winter break.
