Hot holding was appropriate throughout he facility, fried chicken 158F, grits and cooked chicken 150F, chicken and dumplings 158F, peach cobbler 160F in hot holding unit. Cold holding was appropriate, hard boiled eggs 37F, filet fish and sausage patties 38F, raw chicken 40F, steak 41F, sliced tomatoes 42F, Mac and cheese, steak fillets and chicken breast 45F or below. Overall, the facility is clean and maintained. Proper hair restraint and glove usage observed.
