Inspector’s comments
1) Facility has dial style thermometer and infrared surface thermometer. Digital probe thermometer recommended. |Calibration checked in a cold holding product found to be close in internal temperature readings. |2) Seasonal wetness observed in basement storage. All product in basement raised off floor. Operator believes this year to be easier on the seasonal water intrusion.
