All cold holding on the cook line functional cheese 41F, fish 42F. All walk-in coolers functional fish 42F, chicken 41F, salad dressing 40F. All walk-in freezer and freezer units functional. All hot holding functional gravy 170F. Bar area is clean and organized. Facility is overall clean and organzied. No buffet set up yet. Proper cooling of rice and chicken observed. Clams have proper tags.
