Inspector’s comments
Cooling fact sheet distributed at time of inspection. Facility had a single covered pan of cooked and cooled roast beef in the walk in cooler, labeled 9/29, that measured at 45 degrees Fahrenheit in the center of the product. Per conversation with staff, product was cooked yesterday and cooled covered with paper and plastic in the walk in cooler overnight. Pans less than 4 inches in depth and staggered on rolling cart in the center of the walk-in cooler.|Staff actively prepping to go meals at time of inspection.
