All cold holding at the time of inspection functional chicken wings 41F, sliced tomatoes 38F, Sliced cheese 43F. Walk-in cooler is functional beef brisket 38F, Mac salad 39F, chicken wings 40F. All hot holding at the time of inspection is fucntional stuffed pepper soup 170F, pasta sauce 150F. Facility is overall clean and organized. Proper hair restraint and glove usage observed. 2nd walk-in cooler is not beginning used currently.
