Inspector’s comments
Overall facility clean and organized. Proper hair restraint and glove use observed at time of inspection. Excellent labeling of all food items with date and food. All cold holding temped appropriately: crab dip & hummus- 38F, marinating chicken breast- 40F, cooked pepper/onions and cut tomatoes- 39F, crab cakes- 40F, risotto- 38F, haddock fillets- 40F, pancake & French toast batter- 42F, deli sliced roast beef & turkey- 42F. All Hot holding is appropriate; chicken parmesan soup- 175F, home fries- 165. |Note: Facility has an R.O.P waiver for variuous cuts of raw meat. Operator stated they do not do any R.O.P any longer, no in house R.O.P items observed in coolers/freezers.
