All hot and cold holding acceptable. Mac and cheese 165 degrees, brisket 176 degrees. Tomatoes 41 degrees (prep unit), milk 43 degrees (standing refrigerator), walk-in 39 degrees. Facility is very clean. Facility is experimenting making a new sauce.
