Inspector’s comments
All cold holding on the cook line prep units functional sliced tomaotes 43F, pickles 41F. All refrigeration functional slice ham 42F, butter 44F. All freezer units functional. Hot holding clam chowder soup 170F. Walk in coolers functional ham 40F, American cheese 41F, roast beef 40F. Walk-in freezer is functional. Proper hair restraint and glove usage observed. Facility is moving from lunch service into dinner service, not a lot of prep work going on. Spoke with operator about if they have changed the cooling process for roast beef. They stated they now slice it into small prices for proper cooling.
