Inspector’s comments
Part of prep line in kitchen is not is use in order to clean the equipment the floors beneath and behind equipment. Chicken wash station not in use, because it needs repair. Hot holding is appropriate, wild rice, grits, mashed potatoes, Mac and cheese all above 140F. Pot roast 155F, and Mac and cheese in hot sham 150F. Cold holding is appropriate, chicken breast, pork chops, sausage patties all below 45F. All refrigeration is operating properly. Waiver is properly followed. Workable amount of eggs properly labeled with start and discard times. Pancake batter properly labeled. Facility is clean and maintained.
