Inspector’s comments
All hot held food items were observed to be 140F or higher in the steam tables and all cold held food observed to be 45F or lower in all cold hold units. Discussed proper cooling and reviewed facilities cooling SOP. Cooked pasta, raw potatoes for home fries, and cooked mashed potatoes all temped between 44-45F in the new walk in cooler. Discussed proper thawing procedures with manager.
