All hot holing on the cook line functional mashed potatoes 170F, potato soup 180F. Walk-in cooler functional steak 40F, rice 38F, baked potatoes 40F. Walk-in freezer functional. Proper hair restraint and glove usage observed. Facility could use an overall top down cleaning. Proper labeling and dating throughout the facility.
