Inspector’s comments
Facility was observed cooking and cooling: small container of potatoes, solid mass of meat at the time of inspection. Cooling curves found items to be cooling properly at the time of inspection. Cooling process observed adequate: Uncovered, spread out, less than 6 pounds, metal containers. Facility lacks a walk in cooler to cool a large amount of food. Discussed potential difficulties of cooling items with home style refrigerators.
