All cold holding on the sub prep line functional sliced ham 32F, sliced chicken 43F, roast beef 43F. Hot holding functional meatballs 150F. Walk-in cooler is functional roast beef 42F, sliced tomatoes 40F. Walk-in freezer is fucntional. Proper 3-bay sink method observed. Facility is overall clean and organized. Proper hair restraint and glove usage observed.
