Cold holding throughout the facility is appropriate, hamburger patties 27F, chopped ham 40F, cheese 42F, tuna salad 37F, sausage gravy 39F, chili 39F. Proper cooling techniques for gravy, cut potatoes and soup observed in walk-in cooler. Overall, the facility is clean and maintained.
