Hot holding is appropriate, soups are gravies, mashed potatoes, chili, etc, all above 140F. Sliced prime rib 147F, cooked peppers and mushrooms above 140F. cold holding appropriate, sliced tomatoes 42F, hard boiled eggs 41F, elbow macaroni 44F, egg wash 43F, chicken wings 41, and haddock 42F. Proper hair restraint and glove usage observed. Facility is clean and well maintained,
