Inspector’s comments
Hot holding appropriate, baked chicken filets, and chicken nuggets are 170F, breaded chicken strips and nuggets 160F, chicken tortilla soup and chicken noodle soup 160F, chicken filets and nuggets cooked to 207F, Mac and cheese 170F. Cold holding appropriate, milk and egg wash between 37F and 40F. sliced tomatoes 40F, raw chicken products throughout the facility are between 37F and 41F. Proper hair restraint and glove usage observed. Facility is clean and well maintained. Cooked chicken products being donated to the Salvation Army are properly cooled in walk-in to below 45F and then packaged in food grade bags and stored in walk-in freezer for pickup.
