Inspector’s comments
All cold holding throughout functional chicken 42F, sliced tomatoes 44F, cucumbers 40F. Walk-in coolers functional chicken breasts 40F, mac salad 38F. All freezer units functional. Hot holding unit functional soup 150F. Machine dish washer is reaching proper sanitizing temperature. Facility is just opened up for the year last weekend and is overall clean and organzied. Bar area is clean and organzied. Proper hair restraint and glove usage observed. Observed some prep work with no visible issues. Downstairs freezer unit was not fucntional at the time of inspection, but is getting looked at. No TCS food will be stored in there unit it is fixed.
