Inspector’s comments

No hot holding at time of inspection. Cook preparing for lunch and all pre-cooked food items, brown gravy, red sauce, mashed potatoes, etc. were all heated to 165F or above before being placed into steam table. Cold holding is appropriate, brown gravy 41F, sausage gravy 43F, hamburger patties 43F, sliced tomatoes 41F, coleslaw 42F, sliced lunch meats 42F. Proper hair restraint and glove usage observed. Facility is clean and maintained.
