Hot holding throughout facility appropriate, sauces all at 150F or above, rice in sham at 153F. All hot items in front prep service line above 140F. Cold holding appropriate, sprouts 38F, hard boiled eggs 40F, sliced cherry tomatoes 42F. Front prep line, back prep line and walk-in all below 45F. Facility clean and well maintained. Waiver is being followed properly. Proper hair restrain and glove usage observed.
