Inspector’s comments
Hot holding appropriate, mac and cheese 145F. Cold holding appropriate, ground beef 40F, brisket in brine (uncooked) 41F, sliced roast beef 40F. BLT Mac salad and Mac and cheese properly cooling in refrigeration. All refrigeration units operating properly. Thermometers present in each unit. Proper thermometers present onsite to measure temperatures. Proper hair restraint and glove usage observed. Facility is clean and maintained.
