All cold holding adequate pepperoni 42F, pizza sauce 40F. Walk-in cooler is functional cheese sticks 38F. Freezer out in the shed is functional. Hot holding adequate bacon puffs 147F. Proper hair restraint and glove usage observed. Proper 3-bay sink method observed. Facility equipment could use a good overall deep clean.
