Hot holding appropriate, roast beef 170F, brown gravy 167F. Meatballs cooked to 167F and place in single layers to cool in walk-in. Cold holding appropriate, shrimp 41F, salmon 38F, haddock 39F, hamburger patties 40F, roast beef 38F, coleslaw, potato salad and ribs all 39F. Various pastas in walk-in all below 45F. Proper glove usage and hair restraint observed. Facility is clean and well maintained.
