Hot holding is appropriate, French onion soup 159F, sausage rice soup 150F, beef mushroom soup 158F. Soups are homemade, and are re-heated to at least 165F before being held at 140F or above. Cold holding is appropriate, chicken breast 38F, soup 40F, cottage cheese 43F, chopped hard boiled eggs 42F, chopped tomatoes 43F, corned beef 43F, haddock 39F. Two (2) pans of beef tips and one (1) pan of chicken Alfredo cooling properly in walk-ins. New area next to kitchen is completed and the new walk-in cooler and walk-in freezer have been installed and operating properly. Only dry food and single use items stored in basement. Basement beer cooler is operating properly. Facility is clean and maintained.
