Inspector’s comments
All hot and cold holding adequate. French fries 41 degrees (walk in), jerk sauce 40 degrees (standing unit), tomato 38 degrees (prep), pulled pork 198 degrees. Operator was filling the smoker upon inspection. Proper glove use observed when prepping a customers dinner.
