Inspector’s comments
All cold holding functional at the time of inspection on the prep line fish 42F, sliced tomatoes 44F, Chicken 42F. Both walk-in cooler functional at the time of inspection pasta sauce 41F, ham 40F, Alfredo sauce 43F. All refrigerators functional shrimp 40F, chicken 42F, tomatoes 41F. All hot holding functional soup 147F. Machine dishwasher functional. Facility has a new refrigerator. Facility has made good improvements in cleanliness and equipment maintenance since last inspection. It should be noted that one prpe unit was down at the time of inspection and was not beginning used.
