Inspector’s comments
All cold holding on the cook line functional chicken 42F. All hot holding functional gravy 170F, cheddar broccoli soup 145F. Walk-in cooler functional ribs 37F, chicken 42F. Walk-in freezer functional. Facility is overall very clean and organzied. Proper labeling throughout the facility. Perch is from G&H fisheries which is an approved supplier. Hair restraint and glove usage observed.
