Inspector’s comments
No hot holding at time of inspection. Cold holding appropriate throughout facility, sliced tomatoes 36F, cheese 35F, fried eggs 40F, sausage 34F, sliced ham 36F, cubbed chicken 40F, cream cheese 42F, whipping cream 43F, soups between 38F and 40F. Prep unit and all other refrigeration units are operating properly. Bathroom is clean and maintained. Facility is clean and maintained. Staff frying eggs in back prep area. Discussed proper cooling procedures for fried eggs by placing eggs directly into refrigeration to cool instead of waiting until all fried eggs are cooked (approximately 3 dozen).
