Inspector’s comments
First inspection. The walk in refrigerator was operating at 44 degrees, recommended turning down the temperature to maintain adequate food temps. Small prep unit in the kitchen operating at 45 degrees. Discussed lowering the temperature of the prep unit to help maintain temperatures. Walk-in freezer was being fixed upon inspection. All cold holding acceptable, steak 44 degrees, hamburger 42 degrees, tomato 45 degrees. Sea food bought through USFoods.
