All cold holing on the cook line functional strawberries 43F, pancake batter 42F, Sliced tomatoes 44F, cubed ham 42F. All cold holding in the walk-in functional pancake batter 42F. Walk-in freezer functional. Proper hair restraint and glove usage observed. Hand washing available. Facility needs a good overall top down clean of all equipment, floors, and walls.
