Hot holding appropriate, sausage patties 150F, home fries 160F, all gravies and soups above 165F. Cold holding appropriate, hamburger patties 43F, items in prep unit all below 45F. Workable amount of eggs and home fries out for service rush. Placed into walk-in once rush was completed. Facility is clean and maintained. Proper glove usage and hair restraint observed.
