Inspector’s comments

Bone in wings found in the walk in cooler at 11:30 am on a sheet pan cooling after being fully cooked to 165F (as per kitchen manager). Labeling on the tray shows wings were placed into cooling at 11:15am, manager states they are placed in immediately after cooking on a single layer tray in the direct air path of the blower fans, this matches how the product was found. Temperature log in the walk in cooler for foods actively cooling not filled out for the wings. Manager stated they will be educating his staff on the importance of filling out the log and properly tracking the cooling process.
