Hot holding is appropriate, mashed potatoes 145F (made this morning), pulled pork 167F, beer cheese 156F. Cold holding throughout the facility is appropriate, sliced ham 43F, coleslaw 42F, pulled pork 44F, cooked chicken 40F, various pastas all below 45F, salmon 39F, haddock 38F, raw chicken and hamburger patties 38F, cooked chicken breast 38F, prime rib 38F.. Chicken wings out of the oven at 170F-177F. Process for properly cooling chicken wings is appropriate, wings, once taken out of the oven are placed into open bags and placed into reach in freezer. Chicken wings 95F when packaged and placed into freezer at 1:00 pm. Chicken wings 89F at 1:30 pm. Proper hair restraint and glove usage observed. Long stem thermometer available onsite. Facility is clean and maintained.
