Hot holding is appropriate, white rice 157F, and refried rice 165F. Cold holding is appropriate, lo mein noodles 40F, chicken 39F, steak 38F, shrimp 39F, egg rolls 42F, marinated steak 39F. All refrigeration in operating properly. Restrooms are clean and maintained. New prep unit has been installed. Facility is clean and maintained. Discussed proper cooling procedures for potentially hazardous food. Fried chicken in walk-in between 69F and 75F for now hour. Had owner/operator separate fried chicken into 2 containers and place them on the top shelf closer to the compressor fan. Approximately 30 minutes later, the fried chicken was between 65 and 70F.
