Inspector’s comments
Facility is very clean and organized. All food products labeled and dated. All cold holding products are 45F or below. All hot food on service line (pasta, meatballs, pasta sauce, green beans) were 165F or above. Discussed pasta cooling procedures, operator stated they use ice water and ice to rapidly cool pasta after it is cooked, it is then put under refrigeration, once it has reached the proper temperature.
