Inspector’s comments
Facility overall clean and organized.|Hot holding rice 155F.|Discussed cooling procedure for red curry sauce stored in large (5gal) food grade container in walk in cooler. Operator stated the sauce is cooled in smaller containers (2-3 inches deep), initially, then transferred to large (5gal) container once fully cooled. Red curry sauce temped at 39F.|All cold holding temped at 41F or below.
