Inspector’s comments
Soup, at at temperature of 175 degrees F, was in a state of cooling on the counter, in a plastic container. Operator was waiting another 20-30 minutes for the soup to cool before placing it in cold holding.|All hot holding temperatures appropriate at 140 degrees F or above at the time of inspection.
