Inspector’s comments
All cold holding at the time of inspection functional fish 42F, burger patty 44F, sliced tomatoes 41F. Operator was actively cooking pasta sauce, and french onion soup. Walk-in coolers functional chicken breasts 42F, butter 41F, pasta 43F. No hot holding at the time of inspection. Facility has made a lot of maintenance improvements over the winter. Proper hair restraint and glove usage observed. Bar area is clean and organized. Facility is overall clean and organized.
