Inspector’s comments
No hot holding at time of inspection. Cold holding throughout the facility is appropriate, cubed sausage 40F, cut potatoes 41F, halved cherry tomatoes 41F, sliced tomatoes 42F, cubed chicken 42F, shrimp 39F, mozzarella cheese 41F, raw chicken breast 38F. Chicken wings cooked in fryer to 181F. Proper cooling procedures being followed for cubed chicken, chicken wings and sausage in walk-in cooler. Proper hair restraint and glove usage observed. Several employees observed washing hands in between glove changes. Facility is very clean and well maintained.
